Chopsticks in the Land of Cotton: A Southerner's Journey to the Heart of Chinese Food
I was born in Mississippi, the daughter of Chinese immigrants. My parents owned a Chinese restaurant, and I grew up eating Chinese food every day. But it wasn't until I was an adult that I began to appreciate the richness and diversity of Chinese cuisine.
In my early twenties, I moved to New York City to pursue a career in journalism. I was soon introduced to the vibrant Chinese food scene there, and I was amazed by the variety of dishes available. I started to explore the different regional cuisines of China, and I quickly became a fan of Sichuanese, Cantonese, and Taiwanese food.
As I learned more about Chinese food, I also began to learn more about my own Chinese heritage. I realized that Chinese food was not just about eating; it was about culture, family, and identity.

Excerpt
>I remember the first time I ate Peking duck. I was in Beijing, on a trip to visit my family. My aunt took me to a restaurant that specialized in this dish. The duck was served whole, with its skin crispy and golden brown. My aunt showed me how to wrap the duck in a pancake, with scallions and hoisin sauce.
>I took a bite, and the flavor was incredible. The duck was tender and juicy, and the skin was crispy and flavorful. The scallions and hoisin sauce added a perfect balance of sweetness and acidity.
>I ate the rest of the duck in one sitting. I couldn't get enough of it. I had never tasted anything like it before.
>Peking duck is one of the most famous dishes in Chinese cuisine. It is a symbol of wealth and prosperity, and it is often served at special occasions. I am grateful that I had the opportunity to try this dish in its native country. It was an experience that I will never forget.
